MAINTENANCE, DON'T NEGLECT IT
Look after your oven, and it will look after your production.
The oven works for you. Scheduled maintenance ensures correct operation, a longer service life, and the safety of the operator and the working environment.
This applies to all models in the TUBIX range (including "S" versions with twin steam generator) and must be carried out by trained bakery personnel.
⚠️Warning
The oven must be completely switched off and cooled to ambient temperature before starting any cleaning operation.
Disconnect the main electrical supply using the isolator switch and close the gas shut-off valve before working on the burner and combustion chamber.
🔧 Materials and tools required
Flue ducts
The flue ducts carry the burner's combustion gases through the oven body to the flue outlet. Dirt inside the ducts consists solely of combustion residue from the burner (soot and unburnt deposits). Remove the burner before starting. Once cleaning is complete, the burner must be refitted; this should be carried out by a specialised burner technician.
⚠ This operation must be carried out with the oven cold and the burner removed and isolated. Wear a dust mask and gloves when removing soot.
Final checks
⚠️The wood- and pellet-fired model is fitted with a furnace with a side access door, which must be cleaned frequently to remove residual ash and maintain efficient wood combustion.
A second, rear side access door makes it easier to clean the U-shaped duct.
⚠️First of all: make the oven safe.
Disconnect the electrical supply.
Shut off the water supply.
Shut off the fuel supply.
Wait for the oven to reach ambient temperature.
In all cases, comply with local regulations in force regarding fire safety and maintenance of flue exhaust systems.
Recommendation
ask your trusted dealer to carry out the maintenance work.
For burner maintenance, follow the manufacturer's instructions.
For flue maintenance, follow the installer's instructions.
