MAINTENANCE, DO NOT NEGLECT IT
Regular maintenance of the system is of fundamental importance from multiple points of view: it helps preserve the useful life of the machine, maintain its operating efficiency over time, and, above all, ensure the safety of the operator and the surrounding environment.
Neglecting the cleaning and periodic inspection of the components can compromise the correct operation of the system, accelerate its wear, and, in extreme cases, create conditions of risk for the safety of people and for the integrity of the system itself.
The hood draws air both from the bakery environment and from inside the oven, collecting dust and cooking residues such as flour dust, grease, and other combustible substances. When accumulated in sufficient quantity, this dust can ignite due to contact with surfaces that may reach oven temperature, or due to the hot air drawn from the baking chambers. These residues, accumulating in the hood, along the related chimney, or in the flue exhaust chimney, can therefore, under certain conditions related to reduced chimney draft, give rise to smoldering embers or even catch fire.
🔧 In order to ensure safety and the correct operation of the system, regular maintenance of the following components is required:
1. Hood and related exhaust duct: periodically remove grease residues and other combustible substances, checking for any obstructions in the passages or on the internal surfaces.
2. Extraction fan and suction box: inspect and clean regularly to prevent obstructions and the accumulation of flammable materials.
3. Vapor and combustion flue exhaust chimneys: inspect and clean regularly to prevent the accumulation of residues that could trigger a fire.
⚠️ Warning
Keep the flue passages and chimneys constantly clean to prevent fire risk; this also applies to ducts and exhaust chimneys external to the oven.
In the case of solid fuel use (wood, pellets, etc.), residue accumulation is faster and therefore requires more frequent cleaning interventions, particularly in the combustion flue outlet, as normally occurs with fireplaces or stoves.
General Recommendations
Frequency of intervention. Cleaning, which includes the flue and the vapor exhaust chimney, must be carried out at least once a year, more frequently in the case of intensive use or solid fuel (wood, pellets), in order to prevent the accumulation of soot, tar, and other combustible residues that can create a fire risk.
Periodic cleaning is recommended, depending on the level of residue accumulation observed. Failure to clean and maintain the above components can increase fire risk and compromise the efficiency of the system.
⚠️ First: make the oven safe.
Cut off electrical power.
Cut off water supply.
Cut off fuel supply.
Wait for the oven to reach ambient temperature.
In any case, comply with local regulations in force regarding fire safety and maintenance of flue exhaust systems.
