STEAM GENERATOR MAINTENANCE: DON'T NEGLECT IT
Steam is the secret to good bread. Bakers know this.
During the first minutes of baking, steam keeps the surface of the dough moist and plastic, allowing the loaf to expand fully before the crust forms. The result is a thin, crispy, shiny crust and well-developed crumb.
If limescale blocks the holes in the spray tube or encrusts the steam generator bars, performance drops — often without us noticing immediately.
The good news? The maintenance is simple.
⚠️ First: make the oven safe.
Cut off electrical power.
Cut off water supply.
Cut off fuel supply.
Wait for the oven to reach ambient temperature.
🔧 Spray tube: open the flange and extract the tube. Remove limescale from the water outlet holes and, if necessary, replace the tube. When reassembling, orient the holes in pairs downward and seal the flange with high-temperature silicone.
🔧 Steam generator: remove the sprayer and extract the head flange. Check inside: if there are deposits, remove the bars, descale them and replace if necessary. Reassemble the flange with high-temperature silicone, then reinsert the sprayer.
✅ Result: perfect steam like day one.
With hard water, intervene every 2–3 months.
With a softener, once a year may be enough.
Over time, you will learn the right frequency yourself. A small gesture of care that makes a difference in every baking.
