MAINTENANCE, DON'T NEGLECT IT
Take care of your equipment, and it will take care of your production.

The oven works for you. Scheduled maintenance ensures correct operation, a longer service life, and the safety of the operator and the work environment.
This applies to all models in the TUBIX range (including "S" versions with dual steam generator) and must be carried out by trained bakery personnel.

⚠️Warning

The oven must be completely switched off and cooled to room temperature before starting any cleaning operation.
Disconnect the main power supply using the disconnect switch and close the gas shut-off valve before working on the burner and combustion chamber.

• Always use personal protective equipment (heat-resistant gloves, safety goggles).
• Do not use direct water jets on electrical parts, the control panel, the burner, or the temperature probes.

🔧 Materials and tools required

• Long-handled broom (or flexible brush)
• Industrial vacuum cleaner or brush for flour/ash residue
• Plastic or wooden scraper (for more stubborn deposits)

Flue ducts
The flue ducts carry the burner's combustion gases through the oven body to the exhaust. Dirt inside the ducts consists solely of combustion residue from the burner (soot and unburned deposits). Remove the burner before starting. Once cleaning is complete, the burner must be refitted; have this done by a specialized burner technician.

1. Access the flue ducts through the inspection panels/doors highlighted in red in the diagram (see images below).
2. Remove soot and combustion residue from inside the ducts using a long-handled broom (or flexible brush), working along the entire length of the duct.
3. Vacuum up the loosened residue with an industrial vacuum cleaner, working from the same access points.
4. Repeat the operation on all ducts present (central duct and perimeter "U" duct).
5. Carefully close the inspection panels at the end of the operation, checking their seal.

⚠ This operation must be performed with the oven cold and the burner removed and isolated. Wear a dust mask and gloves when removing soot.

Final checks

1. Check that all panels removed during cleaning have been correctly refitted.
2. Restore power to the electrical supply and burner; confirm the burner has been refitted by the specialized technician.
3. Run an empty heating cycle (no product) to check correct operation before production.

⚠️The wood- and pellet-fired model is equipped with a furnace with a side access door, which must be cleaned frequently to remove residual ash and maintain efficient wood combustion.
A second, rear side access door facilitates cleaning of the U-shaped duct.

⚠️First of all: make the oven safe.
Disconnect the electrical power supply.
Shut off the water supply.
Shut off the fuel supply.
Wait for the oven to reach room temperature.
In all cases, comply with local regulations in force regarding fire safety and maintenance of flue exhaust systems.

Recommendation
Ask your trusted dealer to carry out the maintenance service.
For burner maintenance, follow the manufacturer's instructions.
For flue maintenance, follow the installer's instructions.
