Today we would like to share with you some interesting information concerning ZOOM and TUBIX, our steam pipes deck ovens. They are apparently similar in shape and working characteristics. But we used the word “apparently” because there are huge differences between the two.
Take a look at our innovative steamer, which is composed by easy-cleaning, removable and alternately overlapped elements. Every component is filled up with 280-gr-cast-iron spheres.
Water is provided from two different points and it flows downwards, by wrapping up every single sphere. When entering the steamer, water is organized by an electric valve and supervised by a measurement device; a proper basin has the purpose to collect and remove the exceeding amount of water.
This innovative system grants higher amount of steam inside the baking chamber. For all our more exacting customers!
As you will probably know, our ovens are made to last! That's why we only build them with reliable and resistant materials like Aisi 310 steel that we use for heat exchangers.

Why are we among the best in our industry?
The Cyclope Roller heat exchanger is made of AISI 310 temperature resistant steel. Thanks to this component the same level of baking colour and crust thickness can be obtained at every time. Inside this oven, the temperature gradient remains constant in relation to the different bread sizes and the heat distribution is perfect according to any baking need.
Cyclope Roller is built to perform uninterrupted baking cycles and to withstand thermal expansion. It is made of 1.0 to 4.0 mm gauge stainless steel with the front panel of 1.5 mm gauge. The use of different sheet metal gauges optimizes heat diffusion inside the oven, while the bolted structure extended working life.
For the perfect bread you need the right oven: Tubix. The floor and ceiling of the baking chambers are in direct contact with pipes where steam circulates. A powerful heating system ensures stable and gentle cooking.
