Over the centuries, Russia has always been a trustful lover of rye black bread, known as bread borodinsky.

The name “kalach” derives in fact by the Old Slavic word “kolo” meaning "circle", "wheel". Kalach’s shape is not regular: one side is thinner than the other because, they say, that the thinner part was used as a "handle", so it could be eaten even by workers who had no time to wash their hands.
